Chinesology, a premier fine-dining concept under Mira Dining of Miramar Group, is helmed by Culinary Director Chef Saito Chau, who masterfully blends traditional techniques with contemporary artistry. In 2024, Chinesology became Hong Kong's first Halal-certified Chinese fine-dining restaurant, opening the doors of exquisite Chinese gastronomy to the Muslim community and creating a shared space for cultural appreciation.
Uniting Heritage Through Culinary Collaboration
The "TEN Flavours of Hong Kong" Halal Tasting Menu is a culinary love letter to the city, meticulously crafted through unique collaborations with iconic local brands that form the bedrock of Hong Kong's collective memory. The menu weaves a narrative of the city's heritage by partnering with century-old institutions like Lee Kum Kee and NESTLÉ® EAGLE®, beloved 80-year-old brand VITA™, and modern pioneers like Tin Hong Chicken, the city's first halal-certified local chicken farm. Each of the ten courses tells a story, from signature dishes like Chilled King Prawn with Lee Kum Kee Soy Sauce and Smoked Tin Hong Chicken with Rock Oolong Tea Leaf, to the Braised Lee Hoong Kee Premium Dried Abalone and a dessert finale featuring NESTLÉ® EAGLE® Condensed Milk. Together, these courses transform familiar tastes into an elevated, fine-dining experience that honors tradition while celebrating innovation.
An Immersive Journey for a United Community
This project transcends the plate to become a deeply immersive community experience. By deconstructing and reinterpreting the authentic flavors of Hong Kong in a halal-certified format, Chinesology has created more than a menu; it has built a bridge between cultures. The experience invites the Muslim community — both local residents and international visitors — to fully participate in and celebrate Hong Kong’s rich culinary heritage, a cornerstone of its cultural identity. This initiative fosters a powerful sense of belonging and dialogue, transforming the dining room into a vibrant, inclusive space where different communities can connect.
